Picnics

Summer’s almost over but it doesn’t mean you can’t savor the last of it.  How about a picnic?

White Bean Dip with Pita Chips and Crudite

Rosemary Prosecco Cocktail

Wheat Berry, feta, mint, tomato salad

2 cups wheat berries
6 cups of water
2 teaspoons of salt
1/4 cup of loosely packed feta
large handful of mint chopped
1 cup of grape tomatoes halved
half a large onion sliced
juice of half of lemon

Combine 2 cups wheat berries, 6 cups water, 2 teaspoons salt in a large saucepan over medium-high heat. Bring to a boil, lower the heat, and simmer, covered, until plump and chewy about 45 minutes to an hour. The berries should be slightly firm. Drain and set aside.

Brown onion in 1/2 tablespoon of butter, add to wheat berries 

Add feta, mint, grape tomatoes, lemon juice to wheat berries

And something sweet:  Homemade Fig Newtons (via Faux Martha) and  Dried Strawberries (via Miss Renaissance)

So find a green space and soak in the last rays.
